Mixed Greens with Peach and Pecan Dressing
Ingredients
- 8 cups mixed greens -- torn into bite sized pieces
- 1 peach -- quartered
- 1 1/2 tablespoons white wine vinegar
- 1 1/2 tablespoons vegetable broth
- 1 teaspoon walnut oil
- 1/4 teaspoon honey
- 1/8 teaspoon dried thyme
- 1/8 teaspoon freshly ground black pepper
- 3 pecan halves
Directions
- Divide the greens among 4 individual salad plates. Set aside.
- In a blender or food processor, combine the peaches, vinegar, broth or water, oil, sugar or honey, thyme, pepper and pecans. Mix until smooth.
- Spoon over greens and serve.
