Greek Vegetable Bean Salad
Ingredients
- 2 cups fresh spinach -- chopped
- 1 medium tomato -- chopped
- 4 whole radishes -- chopped
- 1 Tablespoon fresh parsley -- chopped
- 1/3 cup chickpeas, canned -- rinsed and drained
- 4 ounces black-eyed peas -- rinsed and drained
- 1 clove garlic -- minced
- 1/4 cup red onion -- chopped
- 2 tablespoons fat-free Italian salad dressing
- 3/4 ounce feta cheese -- crumbled
Directions
- Rinse, dry and chop spinach, tomato, radishes and parsley. Place in a large salad bowl.
- Rinse and drain beans (if you're using canned beans); add to chopped vegetables and toss with crumbled feta cheese.
- Mince garlic, chop onion and whisk together with dressing. Pour over salad, mix well and serve.
