Pasta Salad with Toasted Sesame Vinaigrette
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 tablespoon water
- 2 tablespoons rice vinegar
- 1 tablespoon lemon
- 1 teaspoon tahini
- 1 tablespoon soy sauce
- 1/2 tablespoon toasted sesame seeds
- 4 ounces soba noodles
- 1/2 tomato -- finely chopped
- 2 scallions -- minced
Directions
- Whisk together oil, rice vinegar, soy sauce and tahini. Add toasted sesame seeds.
- Cook noodles according to package directions. Rinse in cold water and drain well.
- Add chopped tomatoes and scallions. Toss with dressing and serve.
