Penne w/Black Olives, Tomatoes and Feta
Ingredients
- 8 ounces penne pasta
- 1/2 tablespoon olive oil (optional)
- 1 clove garlic -- minced
- 1 medium tomato -- cut in wedges
- 1/8 cup black olives
- 3 tablespoons feta cheese -- crumbled
- 2 tablespoons fresh cilantro -- chopped
- 1 tablespoon fresh basil -- chopped
Directions
- Cook pasta until al dente. Drain and return to pot to keep warm.
- Heat oil or cooking spray over medium heat, stir in garlic. Add tomatoes and cook for 3 minutes.
- Transfer to pot with drained pasta. Add olives, cilantro, basil and feta. Toss gently to mix.
