South-of-the-Border Wraps
Ingredients
- 2 tablespoons fresh lime juice
- 1/2 teaspoon soy sauce
- 1/2 teaspoon chili powder
- 3 ounces firm tofu -- drained, patted dry, crumbled
- 1/4 cup red onion -- chopped
- 1/4 cup fresh cilantro -- chopped
- 1 clove garlic -- minced
- 2 flour tortillas
- 1/2 medium tomato -- chopped
- 1/2 cup salsa
- 1 cup lettuce -- shredded
- 1 teaspoon water
Directions
- In medium bowl, whisk 1.5 Tbs lime juice, oil and chile powder. Add crumbled tofu, onion, cilantro and minced garlic. Toss to blend. Season to taste with salt and pepper. Let marinate 20 minutes
- Preheat oven to 350F. Wrap tortillas in foil. Heat in oven until heated through about 10 minutes. Meanwhile, in small bowl, toss lettuce and tomato with remaining .5 tablespoon lime juice.
- Place 1 tortilla on each plate. Place layer of lettuce down center of each tortilla. Top with tofu mixture, dividing equally. Spoon about 1.5 Tbs salsa over each. Roll up tortillas. Serve w/remaining salsa.
